Stocking your pantry is one of the best ways to make cooking homemade meals simple and easy. See the “Stock Your Pantry” blog post for details. Below are some of my favorite meals to make with ingredients I often have stocked and don’t require a special trip to the store. Feel free to change things up and make them your own. These are just some ideas to get your creative cooking juices flowing.
Burrito Bowl: Rice, black beans, salsa, shredded cheese (Optional additions: sauteed onion, garlic, and bell pepper with chili powder, cumin and paprika)
Veggie Fried Quinoa: Quinoa (or rice), frozen veggies of choice, scrambled egg, ginger, garlic and tamari/soy sauce
Loaded Baked (Sweet) Potato: Sweet potato/potato, butter, black beans, spices of choice, frozen veggies of choice
Curried Lentil Stew: Onion, garlic, brown or green lentils, coconut milk, curry powder, broth
Egg Scramble: Eggs, butter, choice of veggies (optional: cheese)
Savory Oatmeal: Oats, butter, cheese, frozen veggies of choice, top with a fried egg
Smoothie: Coconut milk, frozen berries, chia seeds OR nut butter, frozen berries, flaxseeds
